I have always bee sceptical of the ‘wheat belly’ fad as well. It has reminded me however, of how many varieties of grains there are out there, and to try to incorporate them all into my diet on a regular basis. (heck, Ive taken a few of your muffins and made them 100% spelt with successful results!)
I love spelt flour! I’m tinkering with a new recipe based around spelt, so stand by for that! I think my position on Wheat Belly is pretty clear, but in any case, I think the thing to do is try to incorporate grains into your diet in the wholest form as much as possible. Wheat berries, barley, spelt, kamut, brown rice, all make for much more nutritious meals than a flour based one will.
I really appreciate the wheat article … I have a Celiac cousin who’s super passionate and has been trying to convince family members that wheat-free is best for everyone, and claims it helps with weight loss. I’ve always been a skeptic, but I need to learn more about it anyway. This is a good start.
